In week 39 (starting Monday 24th Sep), all of the boxes are receiving Rita’s incredible Floral Kale. This is sometimes called ornamental kale and when you see it you’ll understand why. But it is also really great for eating and its vibrant pink colouring will add real excitement to your meal.
Rita is cutting whole heads for us. This will help to keep the kale leaves fresher for longer, though we recommend that you place the whole head in the crisper section of the fridge as soon as you get it home.
How to cook your Floral Kale
1. Cut the leaves from the main stalk with a small sharp knife. Rinse in cool water. Use your hands to remove dirt that may stick to the hard ribs of the stem or crevices between the leaves. Remember that this came straight from the farm and while it is totally chemical free it will still have soil on it!
2. Cut the tough stems away from the kale leaves and discard them. Chop the kale into smaller pieces if desired, or keep the leaves large and whole.
This method is the best for preserving the most nutrients. Place a cooking pot with 2 inches of water on the stove, turn the burner on high and bring the water to a boil. Layer the kale into the steamer basket, place it in the pot and cover. Cooking time depends upon the size of the leaves and the level of wilt that you prefer. Generally, steaming ranges from 2 to 15 minutes. Drain the kale in a colander when it has wilted.
Pour the olive oil into a frying pan and heat on high. Place cut kale into the pan. Lower the temperature to medium-high to avoid burning the kale. Add seasons like chopped onion or garlic if desired. I’m a big fan of wholegrain mustard with mine. Keep stirring every 30 seconds. Raw kale may takes up to 15 minutes to wilt though bear in mind that you can eat it raw so just a few minutes in the pan, to get hot and seasoned, is often all that is needed.
