You may have noticed that there is a lot of sweet potato in the boxes lately. It is all organically grown by Ken Small up near the northern border of NSW where it enjoys the milder climate of the north coast. We try to keep a variety of staples in the boxes from week to week. However, usual staples such as onions and pumpkin are simply not available at this time of year and won’t be until February. Classic spuds are currently plentiful but the only other starchy staple item around in the spring months is the sweet potato. We thought we’d draw attention to this wonderful veggie. It’s a major staple food across a vast area of the world. It is nutrient dense and is extraordinarily high in vitamin A and Beta Carotene, making it far healthier than standard spuds. It is also extremely versatile. Most of us tend to simply bake or steam it but given that it is used throughout the Pacific, Africa, South America, India and Japan, there are hundreds and hundreds of wonderful regional recipes for this little gem of a veggie. So why not get creative and Google up some sweet potato recipes? You might be surprised by what you discover!
